Enhances sweet notes, reduces acidity

The E&B laboratory at IMS has developed a new filter with unusual perforations. According to "IMS", the reason for this perforated arrangement is that it results in an even extraction of the coffee when preparing espresso, which emphasises the sweet notes in particular while reducing the acidity. These sieves are therefore also less suitable for coffees that have lemony flavour components. Forcing the rather sweet flavours would get in the way of the citrus notes.
